I've always "made dinner" several times a week but lately I've been cooking. I discovered last week that lasagna is insanely easy to make (not that I've never made it before... just never the super easy way - raw noodles, homemade sauce, ricotta+parm+eggs, bag o' fresh spinach, layer it up, bake for an hour covered tightly with foil, remove foil, bake another 10 minutes) and even easier to eat. I've also been making spinach soup reasonably often, and this week I've got plans for chile relleno casserole, salsa, and to bake up some of the remaining oatmeal + dried cherry cookie dough left over from this weekends' recitals. Otherwise, I need to figure out what the Asian-inspired meal of the week will be (something spicy anf Japanese-inspired, I think), and tonight (breakfast for dinner night), I'll probably make sour cream pancakes because I have sour cream and they're super yummy.
I'm not good at meal planning but I do like to have a genre picked out for each night of the week. Monday is take-out night (it used to be pizza night but I'm getting bored with pizza), Tuesday is breakfast for dinner, Wednesday is soup night (my fave), Thursday is Asian night, Friday is Italian night, Saturday is Mexican night, and Sunday is "please, oh please, Mr. K, make something... anything so by the time I get back from Youth Orchestra I'll be able to scarf something down and watch 60 Minutes and The Amazing Race."
...because apparently I'm a senior citizen and I hate to miss "my shows"...
