Key Lime Pie = instant celebration

1 14oz can sweetened condensed milk
3 egg yolks
8 0z cream cheese
1/2 c + 1-3 T key lime juice (I use Nellie and Joe's)

1 graham cracker crust in a deep dish pie pan

Mix milk and cream cheese until smooth, add 1/2 c lime juice, mix thoroughly, test for tanginess (I add an additional 3 T juice to zing it up), add 3 egg yolks, mix until smooth.

Pour into prepared graham cracker crust and bake for 10 monutes at 350F. After 10 minutes, turn off the oven, prop the door open and leave the pie in for another 5 minutes. Then, take it out of the oven, let it cool for 10-20 minutes (to prevent cracking) and put in the fridge to finish cooling.

Once the pie is cool, serve with whipped cream.

YUM!

**I know it is sacrilege to add cream cheese to key lime pie. Get over it. It's delicious!!
